Meatloaf Recipe For People On Paleo Diet

Paleo diet is the healthiest diets of all which works well with our genetic makeup. It was the diet followed by our prehistoric ancestors who consumed fish, fruits, meat and vegetables excluding cereals, processed food and dairy. In this recipe we will try and add ingredients that adhere to paleo diet chart. In a paleo recipe you could be as close to nature as possible so always choose organic ingredients to cook.

Ingredients
2 lbs ground beef
1 tablespoon butter, I prefer organic
1/4 cup coconut flour
1 onion, minced
6 cloves garlic, minced
1 yellow pepper, minced
4 ribs celery, sliced
1 tablespoon dried oregano
1 teaspoon dried basil
1/2 teaspoon coarse ground black pepper
2 eggs, beaten
coarse ground sea salt, to taste
6 oz tomato paste
10-12 slices bacon
How to do
Preheat to 380°F.
Melt butter in a large skillet. Add onion, garlic and yellow peppers and cook over medium heat until onions are translucent.
Add ground beef to a large mixing bowl. Add onion mixture, celery, oregano, basil, black pepper, coconut flour and eggs. Using your hands, mix until combined.
Pour mixture into a medium size glass baking dish.
Sprinkle sea salt over the top of the mixture.
Spread tomato paste across the top.
Layer bacon slices across the top of the tomato paste.
Place glass baking dish on top of a rimmed baking sheet and bake for 35 minutes.
Remove from oven and let rest for 5-10 minutes before serving.

Now enjoy the paleo dinner with your near and dear ones. This recipe would serve 6 to 8 and take about an hour and a half for the cooking process approximately.
